When I think about breakfast, I don't usually think about smoothies, but this one might be the exception that proves the rule!
It has always been a favorite of mine for being a very quick source of nutrients that can be easily prepared in minutes.
It's one of the best smoothies to pave the way for a productive day.
Ingredients
- Apple: An apple a day keeps the doctor awayโbut aside from providing a lot of healthy vitamins, they also sweeten the smoothie. You can peel it if your blender isn't high-speed.
- Spinach: This, of course, is a green, and greens are healthy! If you lack spinach, try using kale or mixed greens instead.
- Cucumber: It's best to seed and chop it before adding to the blender.
- Peanut or Almond Butter: Either peanut or almond butter works great, depending on your preference. If you have a nut allergy, sunflower seed butter is a good alternative.
- Minced Ginger: Ginger adds a sharp flavor and aids digestion. If you don't have fresh ginger, a pinch of ground ginger will do the trick.
- Parsley: Parsley has plenty of vitamin K. If parsley isn't your thing, try substituting with fresh mint or cilantro.
- Lemon Juice: Lemon juice gives a nice punch of flavor. Lime juice can be used as an alternative if lemons aren't available.
- Filtered Water: This will be the base of the smoothie. You can also use coconut water for a tropical twist and extra electrolytes.

Ingredients
- 1 apple chopped (you can peel if you donโt have a high speed blender)
- 1 ยฝ cups chopped spinach
- ยฝ cucumber seeded and chopped
- 1 tablespoon peanut or almond butter
- 1 tablespoon minced ginger
- 2 tablespoons chopped parsley
- 2 tablespoons lemon juice
- 1 cup filtered water
- 1 cup ice
- Stevia to taste
